15-Minute Veggie Weeknight Pasta

Everyone loves pasta but preparing some pasta dishes can be time-consuming. However, with this recipe, you’ll have dinner ready in less than 15 minutes. All you need is some basic ingredients for cooking pasta and veggie leftovers. This is a perfect recipe for a busy weekday night when cooking isn’t an option.

Ingredients

Choose a pasta shape that suits your taste. Most people prefer spaghetti. I also used it in this recipe, although any pasta will do.

Here’s what you’ll need:

  • spaghetti or any other pasta type
  • hot chili pepper (optional)
  • garlic, 2 cloves
  • olive oil
  • fresh tomatoes
  • any veggies — I used leftovers of zucchini and bell pepper
  • parmesan cheese
  • parsley (optional)

Cooking process

Let’s get started.

  1. Bring water to a boil, add salt, and begin cooking pasta.
  2. While pasta is cooking, heat a saucepan, pour in olive oil, and when the oil is hot (don’t let the oil smoke), add minced garlic, chili pepper, tomatoes, and finely chopped veggies. Make sure everything is well mixed. Continue cooking until pasta is ready.
